Whole Wheat, Low Sugar Carrot Muffins

2 cups whole wheat flour

2 teaspoons baking powder

1 1/2 teaspoons baking soda

1 teaspoon salt

2 teaspoons cinnamon

1/2 teaspoon cloves

3 eggs

1 teaspoon vanilla

2/3 cup olive oil

2/3 cup brown sugar

3/4 teaspoon Stevia

3 cups shredded carrots

1 cup applesauce

1 cup toasted unsweetened coconut



Mix dry and wet ingredients separately (sugar and coconut = wet), then mix together. Bake at 350 for about 15 minutes.
