1 cup brown sugar
2 eggs
½ cup canola oil
1 teaspoon vanilla
2/3 cup fat free plain greek yogurt
½ cup pureed beets
½ cup pureed spinach
2 cups whole wheat pastry flour
½ cup baking cocoa
½ teaspoon baking soda
½ teaspoon salt
Mint chips
350° for 8-10 min.
Makes 36 cookies at 108 calories each.
